Pineapple and Jalapeno's - Hawaiian Cowboy Delight!

Peggy from the SB Canning page asked me whether or not she could add pineapple chunks to the pickled jalapenos in order to make a sweeter-heat version. By using the same recipe for Cowboy Candy (pickled jalapenos) and adding about 4 or 5 chunks to the bottom of the jars the result is a great combination of flavors. This new jar has the makings of a Hawaiian pizza with Canadian bacon, a quick blend or chop and you have a great quick relish for hamburgers, or just a great appetizer with cream cheese and crackers. It could also be a dip you can blend in a food processor like the recipe Jennifer made (Cowboy Candy Dip) with cream cheese and serve it at your Hawaiian Luau. Hawaiian Cowboy Delight


1 lb fresh jalapenos
2/3 cup cider vinegar
1 cup chunk fresh or canned pineapple, without juice
2 cups sugar
2 tablespoons mustard seed

Slice jalapenos. Mix cider vinegar, sugar, and mustard seed to low boil. Reduce for 5 minutes to a simmer. Add jalapenos at the simmer for 5 minutes more. Load hot sterilized jars with 4 to 5 chunks of pineapple. Using a slotted spoon add jalapenos first and add liquid filling the jars leaving a 1/4 headspace. Remove air bubbles with a rubber spatula or chopstick and refill to headspace if needed. Wipe rims with wet papertowel. Add hot lids/rings and place in water bath canner. Process at a full boil for 15 minutes. Makes 2 pints and 1 half pints or 5 half pints.

Thank you so much for sharing! I am just getting good at waterbath canning and love recipes like this. Simple and hopefully tasty as it looks, now to wait for my next batch of jalapeno's to grow!

How long should I leave them alone before breaking into a jar? :o) Do they need to sit for a few days, weeks, months ... before best flavor? Thanks!

Here's something nobody every thought of. I made some Hawaiian Cowboy Candy for a chaplain at work and he brought in today a Hawaiian Cowboy Candy PineapplEupside down cake ... the cake was a cake mix and they used the pineapple in the jars along with crushed pineapple and cut up about 6-8 (chopped finely) jalapenos and put with the pineapple topping and brown sugar. Yes it sounds strange, but it is soooo good. Not too hot, just a quick bite that it's some spicy then the sweet. Give it a try.

I have a question about this. My husband is diabetic. I would love to make this cowboy candy for him but worry about the sugar. Can I use splenda?

Splenda says yes you can. I check their website for pickling using the product with vinegars. So it should be fine since the preserving agent is the vinegar

Cindy, I have made this recipe several times for some of my friends and they literally give me the jars BACK THE SAME DAY wanting MORE!!! I may need to grow a field of jalapenos just to keep up with them!
